Study Programme

The Pasta Studio Labs professional course consists of 4 weeks of study which include 20 four-hour meetings: 14 lessons, 3 exercises, and an exam, for a total of 80 hours. Lessons take place every morning from Monday to Friday and include a short break.

The programme is made up of theoretical and practical lessons dedicated to egg and non-egg pasta, with durum and soft wheat, with or without filling. The programme also includes the creation of special, unprocessed, drawn pasta as well as the preparation of various types of gnocchi. The more traditional condiments will accompany the various preparations. Three free exercises followed by a photography session are included 

The cost of Pasta Studio Labs is of Euro 2,700.00 per person. The price includes: Euro 500.00 for the registration fee, teaching material (course manual, apron, jacket, hat and box), ingredients and insurance coverage for the tuition hours at the school. Accomodation is not included but the school can provide assistance to those in need of accomodation.
   

Course information

Pasta Studio Labs aims to spread knowledge of the techniques and traditions of Italian pasta.
The already-trained chefs will specialize in the most characteristic sector of Italian cuisine and will be able to produce a line of quality Italian first courses, whether innovative or traditional.
Amaterurs will have the opportunity to learn in-depth about the various types of doughs and shapes on a gastronomic tour of Italy
The course is therefore open both to those who already have basic training as a chef, who can thus expand their skills by focusing them in the sector, as well as to those who are passionate and decide to specialize in Italian pasta and its photogenic shapes. 

 The participants are required to be punctual and to keep their material and their appearance tidy at all times. A Certificate of Attendance will be issued to the students who have attended at least 80% of the lessons.

The lessons are held in English.
