The right recipe for this Valentine's Day

Not just chocolate for Valentine's day. We dare with a light and tasty salad of orange and bottarga! Here the easy recipe to try!

Orange and bottarga salad (cured eggs of mullet fish)


For 2 people
- 1 tbsp salted capers
- 2 Navel oranges, peeled, white skin removed
- 1 small bunch of green wild radicchio, washed
- 1/2 pod of cured eggs of mullet fish (bottarga of muggine)
- 1 sprig of fresh mint
- 1 tbsp pitted Taggiasca olives
- Freshly ground black pepper
- Evo oil

Rinse and dry the capers at low temperature in the oven or microwave until dry. Once dried, crumble them with your fingers. In the microwave they need about 2 minutes at medium power . Keep them aside.
On a large serving dish place the radicchio leaves, whole or broken by hand if too big. Cut the oranges across 1cm thick and place them on the radicchio, add the bottarga thinly sliced, then add the olives and the mint leaves. Keep cool until you serve.
